Recipe 1 : Strawberry and Almond Olive Oil Cake

Strawberry and Almond Olive Oil Cake

Ingredients:

200ml olive oil, 225g almonds, 200g caster sugar, mashed banana, 150g fine cornmeal, 1 tsp gluten-free baking powder, 200g strawberries, plus extra chopped strawberries to serve, icing sugar to decorate and yogurt, to serve.

Now, bake your cake in just three steps:

Step 1

Heat the oven to 180C/160C. Oil a 24cm cake tin base. Put 200g of the almonds in a blender, and grind it to powder.

Step 2

Whisk the mashed banana and sugar together with an electric whisk– this should take about 5 mins. Add the olive oil, continually whisking, then fold in the ground almonds, add cornmeal and now, add 1tsp baking powder with a pinch of salt. Fold in the strawberries, then scrape into the tin. Roughly chop the remaining almonds and decorate over the top.

Step 3

Now, add the batter into the cake tin and bake it for 50-55 mins until it turns golden and risen. Leave the container to room temperature to cool down before transferring the cake to a plate.

Lastly, dust your cake with icing sugar and serve as you like it with yogurt and extra strawberries or almonds scattered over.

Recipe 2: Apple and Almond Cake

Gluten Free Apple and Almond Cake

Ingredients:

½ cup olive oil, 150g maple syrup, mashed banana, 140g apple sauce, 195g ground almonds, 1 tsp gluten-free baking powder, and 1 tsp cinnamon.

Step 1

Heat oven to 190C/170C fan/gas 5, lightly oil a 23cm cake tin, and sprinkle a circle of baking parchment.

Step 2

Whizz together the oil and maple syrup in a blender for 30 secs. Now, add the mashed banana and whizz for another 1 min. Then add 140g of apple sauce and keep blending it for another 30 secs. Finally, add the ground almonds, 1 tsp gluten-free baking powder, 1 tsp salt, and cinnamon, blend it again for 30 secs, and your batter is ready. Pour the batter into the tin, and settle it well. Now, bake it for 30-40 mins until golden brown.

Step 3

Leave the tin to room temperature to cool down before transferring the cake to a plate. For the topping, take a frying pan, add the chopped apple and cook the apple gently. Add all the ingredients into it and gently cook.

Add ½ tsp salt until the apple is soft and gently caramelized. Now, scatter the bronzed apple chunks over the top, and there is another option for your topping; you can also prepare pieces of caramelized peach or plum, cherry, or berries by cooking it gently with maple syrup.

Your cake is ready to be served.

Recipe 3 : Gluten-free Carrot Cake

Gluten-free Carrot Cake

This easy gluten-free carrot cake is super simple and easy to make.

Ingredients:

150g unsalted butter, 190g caster sugar, 1tsp cinnamon 300g carrots, grated, two mashed bananas, 250g gluten-free flour, 1 tsp gluten-free baking powder, 100 mixed nuts, icing sugar, and 2tsp cinnamon powder.

Step 1

Heat oven to 190C/170C fan/gas 5, lightly oil a 900gm cake tin, and sprinkle a circle of baking parchment.

Step 2

Firstly, add butter and 190g caster sugar to a bowl. Now, beat it until it is soft and creamy with a beater, then add grated carrot and stir it well. Now, add the mashed bananas and mix them well.

Then, add 250g gluten-free flour, cinnamon, 1 tsp baking powder, chopped nuts, and blend it nicely. Pour the carrot cake batter into the container and bake the cake for 50 mins.

To know whether your cake is completely baked or not, poke the skewer in the center of the cake and pull it out. Now, check the skewer whether it comes out clean if yes, then your cake is ready.

Now, leave it for 15 mins to cool down.

Step 3

Meanwhile, start preparing the icing. Beat the butter until it turns soft. Now, add cinnamon and icing sugar into the creamy butter. Stir it again until it turns thick and creamy. Then, spread the creamy icing on the top of the cake after cooling it down to room temperature, then sprinkle the chopped nuts above it. Now, your gluten-free carrot cake is ready to be served.
