For the Burrito: 3 cloves of garlic, 1 onion; chopped, ¼ cup yellow bell pepper, ¼ cup red bell pepper, 2-4 tbsp fresh coriander; chopped, 1 cup water, salt, ½ tsp pepper powder, 1 tsp olive oil, ½ tsp cumin, 1/3 cup boiled kidney beans, 1/3 cup American corn; boiled, 1 cup boiled rice. 1 tbsp ketchup and ½ cup processed cheese.
For the salad: ½ onion; thinly sliced, ½ tomato; thinly sliced, ¼ capsicum; thinly sliced, ½ cucumber; cut in cubes, 2 tbsp fresh coriander, 2 tbsp fresh parsley, 5-7 olives, lettuce, 1 tbsp olive oil and salt.
For the dip: 1/3 cup hung curd, ½ lemon and salt.
Step 1: Firstly, make the tortilla exactly how roti is made, just keep it a little thicker and larger. Then, for the color add beetroot powder.
Step 2: Then, heat the oil in a pan. Add in onion and garlic and cook until it starts to brown. Then, add in kidney beans, corn, and tomatoes. Now, add everything else and cook it well till you get a soft paste. (you can also cover it with a lid and cook for 2-4 mins).
Step 3: Now, once they soften add rice and ketchup. Then, mix it well and add processed cheese. Now, cover it with a lid and take it off the heat. The cheese will automatically melt.
Step 4: Now, take the tortilla and spread a generous amount of ready rice that you prepared in step 3. Then, add the dip, now, add some fresh coriander.
Step 5: Now, add in ½ onion; thinly sliced, ½ tomato; thinly sliced, ¼ capsicum; thinly sliced, ½ cucumber; cut in cubes, 2 tbsp fresh coriander, 2 tbsp fresh parsley, 5-7 olives, lettuce, 1 tbsp olive oil and salt.
Now, wrap it up tightly.
