Mexican Street Corn Salad: Recipe

Ingredients: 1tsp olive oil, 1.5 cups American sweet corn, ½ onion; chopped, ½ red bell pepper; chopped, 2-4 green chiles; chopped, ¼ cup paneer, salt, 3-4 tbsp processed cheese, 2 tbsp hung curd, 1 tbsp mayonnaise, 2 tbsp lemon juice, ½ tsp cumin, salt, 1 tsp red chili powder

Step 1: Firstly, heat olive oil in a pan. Once it starts to smoke, add 1.5 cups of American sweet corn, ½ onion; chopped, ½ red bell pepper; chopped, 2-4 green chiles; chopped, and cook till it’s slightly browned.

Step 2: Then, crumble the paneer and add salt and mix it with the processed cheese.

Step 3: Now, mix 2 tbsp hung curd, 1 tbsp mayonnaise, 2 tbsp lemon juice, ½ tsp cumin, salt, and 1 tsp red chili powder. Then, mix the cooked corn with most of the cheese (keep some aside for garnish), ¼ cup chopped coriander and the dressing. Serve with leftover cheese and some fresh coriander.
