Ingredients: 35g all-purpose flour, 1tsp baking powder, 3 egg yolks, 1tbsp milk, 1tsp vanilla extract, 3 egg whites, 60g powdered sugar, oil for shallow frying, 2tbsp water, 8-10 blueberries, maple syrup.

Recipe

Step 1: In a bowl, add 35g of all purpose flour, 1tsp baking powder and mix it well. Now, keep this mix aside for a while.

Step 2: In a mixing bowl, add 3 egg yolks and whisk it well. Now, add the prepared flour mixture and mix it well. Next, add 3 egg whites in another mixing bowl and whisk it well.

Step 3: Then, add 1tsp baking powder and mix it well. Now, add 60g powdered sugar and mix it well. Add this mixture into batches in the egg yolk mixture and whisk it well.

Step 4: Now, grease the mould with oil and add the prepared batter in it. Add 1tbsp water on the sides on the pan and cover it with a lid. Cook for 5-7mins on a medium heat.

Step 5: Open the lid and remove the pancake out of it. Now, flip it on the other side. Now, again add 1tbsp water on the sides on the pan and cover it with a lid. Cook for 2-5mins on a medium heat.  

Open the lid and remove the pancake. Now, place it on a serving plate. Garnish with some blueberry chunks and maple syrup.

Your fluffy Japanese pancake is ready to serve!
