Strawberry Jam Cake

Makes: 2lbs/1kg/8 inch mould

Ingredients: 120g Jaggery, 70g Coconut Oil, 1tsp Vanilla essence, 20g flax seed powder, mixed with ½ cup water, ½ cup Yogurt, 100g Strawberry Jam, 150g Whole Wheat Flour, 75g All Purpose Flour, 1/2tsp Baking Powder, ½tsp Baking Soda, ¼tsp Salt, 2 Strawberries; Chopped and Almond Flakes-sprinkled.

Step 1- Take a 2lbs/1kg/8 inch mould. Preheat oven at 180◦C.

Step 2- Mix 70g Coconut Oil, 1tsp Vanilla essence, and all the wet ingredients with jiggery powder.

Step 3- Now, take all the dry ingredients 20g flax seed powder, 150g Whole Wheat Flour, 75g All Purpose Flour, 1/2tsp Baking Powder, ½tsp Baking Soda, and ¼tsp Salt. Mix it the wet paste and whisk all these really well.

Step 4- Grease the mould with butter and sprinkle a little all-purpose flour. Transfer the batter into greased mould and spread it out. Let it bake for 30-40 minutes in the oven until it turns golden and risen. Leave the container to room temperature to cool down before transferring the cake to a plate.

Lastly, serve as you like it with extra chopped strawberries and almond flakes scattered over.
