Walnut Orange Cake: Recipe

Ingredients: 150g all-purpose flour, 70g walnuts, 1tsp baking powder, 1/2tsp baking soda, 100g soft butter, 125g sugar, 2eggs/2tsp flax seed powder mixed with 4tbsp water, 1tbsp orange zest, 110g fresh orange juice, 35g walnuts; crushed.   

Makes: 1.5lbs/800g/8 inch mould

Step 1: firstly, blitz together flour, baking powder, baking soda and walnuts, till you get a fine powder. Now, transfer this into a big bowl. 

Step 2: Then, blitz together butter, sugar and eggs (or flaxseed mix) till it’s smooth. Now, pour this over the dry ingredients and mix it well.

Step 3: Now, add in orange zest and orange juice and bring it all together by whisking. Lastly, add in the crushed walnuts.

Step 4: Pour the batter into a greased mould and bake it in a pre-heated oven at 180◦C for 30-35mins or do a toothpick test and wait until the toothpick comes out clean.

Your walnut orange cake is ready to serve.
