Falafel Wrap: Recipe
Ingredients:
For the Falafel: 3 cloves of garlic, 1 onion; chopped, ¼ cup lentils, 2-4 tbsp fresh coriander; chopped, 1 cup water, salt, ½ tsp pepper powder, 1 tsp olive oil, ½ tsp cumin, 3-4 tbsp chickpea flour.
For the salad: ½ onion; thinly sliced, ½ tomato; thinly sliced, ¼ capsicum; thinly sliced, ½ cucumber; cut in cubes, 2 tbsp fresh coriander, 2 tbsp fresh parsley, 5-7 olives, lettuce, 1 tbsp olive oil and salt.
For the hummus: ½ cup over boiled chickpeas, 2-4 cloves of garlic, ¼ cup of tahini, handful of fresh coriander, ½ tsp cumin, 1 tbsp lemon, salt as per taste, 4 tbsp olive oil.
Step 1: Firstly, make tortilla exactly how a roti is made, just keep it a little thicker and larger. Then, for the color add beetroot powder.
Step 2: Then, heat oil in a pan. Add in onion and garlic and cook until it starts to brown. Then, blitz the chickpeas till it’s coarse and add everything else and mix it well till it’s nice and sticky. (It should come together when you squeeze it) Now, shape them in flat falafels.
Step 3: Now, heat olive oil in a pan, add the flat falafels and cook till they turn brown on both sides. Then, blitz : ½ cup over boiled chickpeas, 2-4 cloves of garlic, ¼ cup of tahini, handful of fresh coriander, ½ tsp cumin, 1 tbsp lemon, salt as per taste, 4 tbsp olive oil, all this together till it’s smooth.
Step 4: Now, take the tortilla and spread a generous amount of hummus that you prepared in step 3. Then, break and add the falafel in the middle.
Step 5: Now, add in ½ onion; thinly sliced, ½ tomato; thinly sliced, ¼ capsicum; thinly sliced, ½ cucumber; cut in cubes, 2 tbsp fresh coriander, 2 tbsp fresh parsley, 5-7 olives, lettuce, 1 tbsp olive oil and salt.
Now, wrap it up tightly.
