Vegan Blood Orange Cardamom Olive Oil Cake: Recipe

Ingredients

For the candied oranges: 1 cup raw sugar, 1 cup water, 2 cardamom pods; crushed or ¼ tsp ground cardamom, and 1.5 blood oranges; thinly sliced.

For the cake: 1tsp corn starch, 70 mil soy milk, 1/3 cup sugar, ½ tsp salt, 1/6 cup plus extra-virgin olive oil, 1 tsp vanilla extract, 2-3 cardamom pods or 1 teaspoon ground cardamom, 1 tsp orange zest, 3 tbsp freshly squeezed orange juice, 1/8 tsp baking soda, ½ tsp baking powder, and 1/2 cup all-purpose flour. 

Step 1: Firstly, boil your thin orange slice in sugar, crushed cardamom and water for about 15 minutes and then let it cool. Pre-heat the oven to 180C/360F. Now, beat the corn starch, soy milk and sugar with an electric beater until fluffy and bubbly.

Step 2: Then, mix all the dry ingredients separately. Now, gently combine your wet ingredients with the dry ingredients with the help of a spatula.

Step 3: Now, place your orange slices in a lined cake mould. Then, pour in the batter and bake for about 30mins.

Step 4: Let it cool for about 10 minutes before taking it out. Serve it with extra syrup from the candying process and more olive oil.
