1. Scallion & Cheese Pancakes

Get ready to make some healthy and cheesy pancakes for your breakfast.

Ingredients

For Pancakes: 1 cup all-purpose flour, ½ cup boiling water, 3tbsp sesame oil, 1/3 cup scallions, 1/3 grated cheese.

For the dipping sauce: 2tbspnlight soy sauce, 2tbsp rice wine vinegar, 1tsp scallions; finely chopped and 1tsp sugar.

Step 1: Firstly, pour hot water and oil over flour and knead it into a soft dough. Now, let this rest for 30mins.

Step 2: Now take out the dough and cut it into four parts. Start rolling one part of the dough, brush it with oil and then, roll it in a cylinder and bring it back. Roll it a little bit again. Now stuff it with scallions and cheese.

Step 3: Now, bring it back and roll it as you would for a chapati. Then, brush it with oil and then take a pan, cook it in some oil till it’s beautifully golden brown and crispy on both sides.

Your scallion and cheese pancakes are ready to serve hot!

2. Spinach Pesto Grilled Cheese

You cannot imagine how good it tastes. Try out this recipe and I’m sure you’ll love it!

Ingredients: 4 slices of bread, spinach for the filling, oregano, mozzarella cheese

Pesto: 1 cup Spinach (wash it well and try to use the small, fresh ones), 4tbsp processed cheese, 6-8 walnuts, salt as per taste, 4tbsp olive oil (don’t use extra virgin)

Step 1: Blitz all the Pesto ingredients till it’s smooth. Add more olive oil if needed. Now, spread the paste on both slices of bread.

Step 2: Now, sprinkle mozzarella cheese over it, place spinach over this, sprinkle oregano and add some more mozzarella over it. Then, cover it with the other slice and press it down.

Step 3: Grill it in a pan with a drizzle of olive oil till it’s golden brown and crispy. You can also grill this in a griller too. You can also use butter instead of olive oil.

Your Spinach Pesto Grilled Cheese is ready to serve!

3. Chickpea Salad Sandwich

This one’s my favorite breakfast sandwich as it is high on protein and super delicious.

Ingredients: 1/3 boiled chickpeas, ½ grated carrot, ½ onion; chopped, ½ cucumber; chopped, ½ tomato; chopped, 1tbsp coriander; chopped, 1tbsp mayonnaise, 1tsp mustard sauce, salt as per taste, ½ tsp cayenne pepper and black pepper.

Step 1: Mash up your boiled chickpeas and add in ½ grated carrot, ½ onion; chopped, ½ cucumber; chopped, ½ tomato; chopped.

Step 2:  Now, add in 1tbsp coriander; chopped, 1tbsp mayonnaise, 1tsp mustard, salt as per taste, ½ tsp cayenne pepper and black pepper

Step 3: Then, mix it well till it’s nicely combined. Noe, spread this over a slice of bread or toast and add a crunchy leaf over it. Cover it with another slice and take in.

Your Chickpea Salad Sandwich is ready to take in!
